I don't want to blow my own horn here, but I woke up today morning feeling very proud of myself for recreating a dish.
You see, near to where we reside, is an Italian Restaurant called Radice ( pronounced Ra Di Che). I chanced upon it when we went over for one of Riya's friend's David's birthday party. It is an expensive restaurant. A dinner for 4 will set you back by $100.
While we there during the birthday celebration, they served us this delicious pizza with toppings of spinach, wild mushrooms and a different kind of gourmet cheese. I loved it, so did Anand and now my girls have jumped on the bandwagon too. It was called Boscaiola Pizza. I decided to attempt making this pizza since I can't be purchasing pizzas from them at US$16 for just 6 slices!!
I went searching for that cheese, it was Fontina anyway. Then I sourced for the spinach but couldn't find wild mushrooms, so stuck with button mushrooms. Researched on the Internet on how it could have been done. There wasn't any Boscaiola Pizza recipe. So I decided to try it out on my own last night. I told Anand before attempting , that if I could bake this Pizza, I am going to throw hats off to myself!!
It was a complete success!! I was dumbfounded. I was very proud of myself that I could recreate the exact pizza on my first attempt.
Anand declared that I am the best cook in the world. Coming from someone who glorifies his mom as a wonderful cook, that was something.
