My 12- year-old daughter Ranya hardly asks me to cook any particular dish but last Monday, out of the blue, she asked me to cook Mint Rice. So that's what I cooked today for lunch. It's a great combination Mint Rice and Dalcha (which I will be sharing in another post). It's definitely worth a try!
Ingredients (Serves 4) 2 cups Basmati Rice, washed and soaked for 30 mins 2 cups firmly packed washed mint leaves 1 tsp ginger garlic paste 1 green chilli (or 1/2 if you prefer less spicy) 1 tsp cumin seeds 2 bay leaves 1 medium onion sliced thinly 4 cups water Salt to season Method Blend the packed mint leaves, ginger garlic paste and green chilli till smooth. You might need to add a bit of water. Set aside. Drain the basmati rice and set aside. Heat a saucepan and pour in the oil. Fry the cumin seeds and bay leaves till fragrant. Add in the sliced onion and fry till translucent. Add the basmati rice and let the rice grains be well coated with the oil. Transfer to a rice cooker, add in the blended mint paste, water and salt as preferred. Give it a good stir and switch on the rice cooker. Serve warm garnished with mint leaves with Dalcha or any other curry.

Chapathis (Wholewheat flatbread) are healthy enough using whole wheat flour but do you know you can make it even healthier? Simply fortify it by adding oats, sesame seeds, flaxseeds...
Ingredients ( yields 16, 5 inch chapathis) 3 cups of chapathi (wholewheat) flour 4 tbsps oats 2 tbsps sesame seeds 2 tbsps flaxseed 2 pinches salt 3 tbsps olive oil 1.5 (+/-)cups Whey water/Skim milk Method Mix all the dry ingredients first in a medium sized bowl. Add in the olive oil and then the skim milk. I have discovered that if you use whey water ( ie the water that remains after you make milk cheese at home), the chapathis turn out incredibly soft. Start kneading either in your mixer or by hand. Once you obtain a nice dough, leave it aside for two hours. Roll pieces of dough into round flatbreads and roast on pan with minimal canola or olive oil. Serve with any curry or can be devoured on its own with honey! |
