My husband Anand is a strict vegetarian. The only thing closest to an animal by product he takes is Egg Whites. And he is a health freak too :)) So I was faced with a tough challenge on how to make an Eggless, Butterless banana bread. After a few tries, I came up with this! And I have fortified the flour with oats and flaxseed meal. Oh, did I mention it has walnuts too?? Can it get healthier than this??
Ingredients (yields a loaf)
3 ripe bananas (or 2 large ripe bananas), mashed
1/2 cup sugar
1/2 cup veg oil
1/4 cup milk
1 tsp vanilla extract
1/2 cup all purpose flour
1/2 cup ground flaxseed
1/2 cup oats
1 tsp baking soda
1/2 cup chopped walnuts
Preheat the oven to 325deg F.
Whisk all the first 5 ingredients in a mixing bowl.
Add in the next 5 ingredients and combine well for 2-3 minutes.
bake in a greased loaf tin for 50 mins on the lower shelf and another 30 mins on the upper shelf. Check with a skewer to ensure it is baked.
Enjoy this delicious moist eggless butterless Banana Loaf for breakfast or with coffee or tea.
