6 Ingredients Rosemary Roasted Potatoes

Have you noticed how each dish is somehow connected to a memory? Amazing isn't it? As your taste your food, it brings back fond memories of when you first tried it, whom you shared it with, the conversation that followed...etc

During our long stay in Europe in 2001, we were living in a service apartment Collingham Gardens in Kensington, Central London for around 6 months. We'll be stuck indoors because of the weather. I came across this recipe while watching one of the cooking shows on TV while drops of rain drenched our windowsills ( interesting observation - it seems to be raining in a couple of my memories)

I have made this dish for my immediate and extended family in Spore and again for a close friend who had a small gathering at her place in June 2013. You might be wondering - who is this lucky friend for whom I kept on cooking for? Well, she knows who she is :))

This is a very easy dish to prepare using only 6 ingredients. You can add in other vegetables too like green beans, carrots, asparagus but remember to adjust seasonings accordingly. Simple but oh so satisfying.

Ingredients ( Serves 2)

2 medium potatoes, scrubbed, eyes removed and cut into large cubes

6 garlic cloves, skin removed and left whole

1 tbsp of fresh rosemary leaves ( 1 tsp dried ones)

Olive Oil

Salt & Pepper to season

Method

Preheat oven to 375 deg F ( 200 deg C)

Place the cubed potatoes and garlic in a baking dish. Drizzle olive oil and sprinkle with salt and pepper.

Using your fingers, coat the potatoes and garlic well with the seasonings.

Lastly, toss in the rosemary leaves over the potatoes.

Bake for 40-50 mins till potatoes are cooked and golden brown on top. Enjoy !!
